Mixed Berry Crumble

This is a very easy and delicious crumble recipe. The best part about it was I got to finish all the bags of frozen fruit that’s been taking up so much room in our freezer. It’s super simple and easy to make, and is especially delicious with the maple brown sugar oatmeal (that we practically always have on hand). There wasn’t much left over, but the recipe serves a family of 6 hungry bears.


Ingredients:


For the filling:

6 cups of frozen berries (blueberries, blackberries, raspberries, strawberries etc.)

½ cup of sugar

1 Tbsp of cornstarch

1 Tsp of lemon juice

¼ Tsp of Salt


For the topping:

¾ cups of Flour

Two packets of Maple and Brown Sugar Quaker instant oatmeal oats (or ¾ cups of rolled oats if that’s how you roll)

½ Tsp of Baking powder

½ Tsp of Salt

6 Tbsp of butter (softened)

1/3 cups of sugar

In a medium bowl, mix all the ingredients for the filling and transfer to an 8” by 8” baking dish.

In another bowl, beat the softened butter and sugar together until light and fluffy.

Add the flour, baking powder, salt and packets of oatmeal.

Stir until well combined. Form small chunks with hands and press onto the fruit mixture.

Bake in a 375-degree oven for an hour, or until it is nice and golden in colour and the fruit mixture is bubbling in the center.

Let cool at lease 20 minutes before serving, and absolutely serve with a scoop (or two!) of vanilly ice cream!
